Depends on your budgetand your tastes of course, but Edinburgh has got lots of great eateries. I second The Verandah for a good curry. For Scottish cuisine, Stac Polly is pretty good (you get a glimpse of it in Project Gotham on the XBox) as are Dubh Prais and Howies. For great food at reasonable prices, Montpeliers is a good choice if you don't mind loads of students.
Mind you, what would I know? I live in Texas.
