see this is what I thought, it's a typo, or i had the word "tenderloin" wrong all along, but no, it's fucking tendon
whatever they do to it gives it a gel-like "chewy gummy bear" consistency apparently, and it has a mild beefy flavor, i swear the menu was putting me off the food
