I prefer calves, but I'm quite happy with lambs. Chicken livers are only fit for making pate.

This meal was from my canteen...and the EEC would probably designate them as a timber by product

edit. The liver was lambs, the gammon was excellent the potatoes could have done with about 5 minutes more...overall pretty good for our canteen
