Talking in my sleep
I'm not aware of doing it, so it doesn't creep me out, but it's crept out plenty of other people.
I don't just mumble, apparently, I properly talk, and even reply to people when they speak to me. I once sat up at 2am in a hotel room in Spain and asked where my horse was, then had a whole conversation with my Mum about 'what horse?', 'my horse!, etc., etc.
If you have this habit, I've found it's best to warn anyone you're sharing a room with, as otherwise it really fucks them up when you sit up in bed with a jolt in the middle of the night and start having a conversation with someone who's not there.

I talk
mostly gibberish, but I have been known to sing in French, and a couple of weeks ago sat bolt upright and screamed. Proper scream sound, but quiet.
Mate of mine used to shout and argue in his sleep, much like when he was awake. One night he was doing it and another mate and I were laughing about it. Took us a while to realise that at some point during the laughter he had woken up and was shouting at us, because it sounded exactly the same.

I've woken up occasionally
conscious that I've been screaming, and I know exactly what you mean by 'proper scream sound, but quiet' Sort of strangulated, because you're not filling your lungs beforehand.

Cripes!
Done this on many occasions. Then I get scared because I'm not making any noise whilst attempting to scream. Then get myself into a more panicked state!
Other than that I did wake my wife up once by making 'duck noises'. Yes, I was asleep and no, she doesn't harbour sexual feelings for water birds.

My daughter thinks her dreams are real. Shes had a go at me in the last week because she can't find her new shoes with hearts of the Aunty Donna bought her (she didn't) and last night woke me up at 3am to tell me that her sister was crushing her Pizza.

Apparently I once started having a real go at the missus at about 2 in the morning...
