It's from the Yiddish 'laks', from Middle High German lahs, salmon, from Old High German; see laks- in Indo-European roots.

fresh is lovely. but tinned or smoked smells like a whore's drawers.

'Hot smoked' is best.
Looks like fresh but with a smoked flavour. I recommend it.
