I've always wanted to try Hugh's elderflower champagne recipe, looks awesome.

I think Crow's Chateauneuf Du Pond was elderflower champagne.
Talk to him about how that went.

3 batches made to date
2008 batch: delightful. We are still saving the last bottle for a special occasion
2009 batch: went a little awry. Made the mistake of bringing it along to a couple of b3ta bashes, at the second of which I ended up drinking nearly 2L of it myself. Not a good idea. Due to its "brackish pondwater" qualities it has since earned a lot of ridicule, albeit with a fairly frightening reputation.
2010 batch: we got it right again. Absolutely delightful and even managed to reassure some people who'd been put off by the 2009 batch. Took some along to a house party at which it not only went down very well, it drew a lot of questions from people who wondered how we made it, including several REAL WOMEN.
