but beyond 'I have red curtains and only learnt today that you are meant to have bigger curtains than the window space' I don't have any other curtain knowledge.

It comes from the French word 'soir', meaning 'evening'. As in 'bon soir'. Adding the 'ée' makes it into a length of time rather than a general noun. The same works for 'jour - journée', and 'an - année'.
