So far I can highly recomend Blood on The Tracks
Bringing It All Back Home is also sounding good, but is earlier although not so early it's acoustic.

You can't really go wrong with anything between his 2nd-7th albums
Outside of that it is pretty much down to personal preference - there are some gems, some duff ones.
As Chompy refers to, he had a bit of a return to form in the mid 70s with Desire.
Or just go for The Best of Bob Dylan.
