For staple it'll be something like onion or tomato (for sources), but I love asparagus dipped in a duck egg yolk. I also love auntychokes when they're boiled and you get some alloli or tobacco mayo to scrape the flesh off the leaves with your teeth then finally you get the heart which is Georgia's.
