Stick with that, Gonz. You won't go far wrong. Don't over cook the liver, get the butcher to cut it 1.5cm to 2cm thick.

Thanks man, I do a pretty mean bit of liver. You're spot on, thick cut, and the pan should be as hot as it goes for a short time, just 'till you get a nice crust.And I dust it with flour and a bit of seasoning, to help crisp it up.
