not to overpowering and just melts away.

Mine too, it's delicious.
There's a Spanish blue I bought at a food fair thing on the South Bank once which is easily the best cheese I've ever had, unfortunately I was pissed off my gourd when I bought it and thus haven't a fucking clue what it was called.
