Nut roast is a good one, because you can have all the trimmings
My mum once did me a really nice mixed mushroom fricassee thing on puff pastry, that also went with the trimmings. Or something like pithivier - you could do that with any filling, butternut squash and goats cheese or blue cheese and pine nuts maybe?
