He did some menu development work when I was at Whitbread. Taught me about more than steak obviously, but I mentioned that specifically as I know what a cowhead sportscow is.

Results were conclusive.
sous vide was faffy and wanky and other methods were equally as good, if not better.

Also; sure it was lamb or hogget? How long was it hung for? Dry hanging or wet? Grass fed?
