I know several people that have lost everything by taking on a boozer or a restaurant. Massive gamble. I wouldn't do it.

And tend to close rather late, then you have to clean up, cash up, bottle up for the morning, clean the lines etc.
If a pub closes at 12, last customers leave by 12.30, then you've got two hours work minimum. Then an early start in the morning (well, 8am) to receive deliveries, manage payroll, VAT & other paperwork before opening at 11am.

Most pubs can't afford the staff to do all of that so it falls to the gaffer.
