Is it possible to make an external hard drive WORM? (Write once read many)
If so, please tell!?

That contained a hardware write-blocker. Write what you want to the drive, then put the drive in the caddy.

Try either BoxBackup or Duplicity.
Both of these encrypt on the source machine, copy just the changes to the backup server.
If the backup machine gets stolen, no worries - it's all encrypted.
Boxbackup I find awkward to set up and logging is shocking. All uses SSL certs. It does, however, keep an unspecified amount of 'old data', which it starts deleting when it runs out of space.
Duplicity works by public key encryption of diff'd tar archives, copied to the backup server. Very easy to set up and manage.
Take it one step further and sign the archives, then noone can add to them without breaking the seal.

I may or may not also do stuff. i like to do stuff and I like to drink.
Agnostic sometimes comes drinking with me but he can't take his ale that well and ends up squiffy on a small amount. He likes to have his hair ruffled but displays a physical aversion to this which I suspect is male bravado.
I eat alot of meat, chicken in particular. I quite like chicken. I eat alot of fruit to counteract the meaty badness and to make sure I stay fit and healthy.

I guess you could remove pin23 from the hard drive's ribbon cable connector- that's the only pin that's dedicated to "write" operations and would physically stop the "write" commands getting to your HDD while allowing the "read" operations.

It's nothing that someone with a careful hand and good soldering iron couldn't get around, so don't rely on it for a court case or anything. But for data storage I think it should do.
