Aside from being on occasion a frightbul bore, I admire hugh Fearnly-Whittingstall's outlook on food.

I'm not good with offal and innards, but I'm working on it. My Mum, a child of rationing, still laments the day they stopped selling cow brains!

Last winter I made a slow-cooked (5+hrs) stew of oxtail and beef cheeks in red wine and herbs.
It'd set solid at room temperature. Laaahhhvly. *salivates*

I had venison and pigeon sausages
a while back. Delicious

Edit: last time I had guinea fowl it was for college dinner. Very tasty
