I'm going to Tenerife on the 1st of December. I'll be back to London the 10th of January for a couple of days, but I think you'll be gone by then.

Well, I'll be in the Maldives
then a quick trip to deepest Patagonia, followed by a week in Tahiti, then trekking in the Sierra Nevada for a month.

Actually, I'll still be in Scotland, but I just felt like joining in all this travel stuff.

We've got a New Zealand trip planned for New Year 2012 though, so hope to manage to take in a few other places on the way back.

Did Singapore once before, so HK would be a good stopover. I also fancy going to the Cook Islands again, but logistics may prevent this.

I was going to recommend Hong Kong too
You could be there for the Chinesse New Year too (expectacular, but most shops will be closed for 1 day). Make sure you have time to explore Lamma Island (half a day should be enough).

Bangkok is as well a great stop over; very cheap and quite nice, although most Thais will think you're a walking ATM...

Lamma island is great - used to go there about one Sunday in four when I lived in HK.
Also Mongkok night market, Lan Kwoi Fung on a Friday night, Stanley for brunch on a Sunday and Wednesday nights at the races in Happy Valley.
