Finished up seeing a specialist, never thought it was the chillies because I'v always eaten them, turned out to be the habanero though, i'm fine with cyan, wasabi gets me too...

I mixe wasabi, english mustard, habanero, sweet chile, ketchup, cyan, salt, pepper, oregano, tyme, sage, paprika and garlic powder to coat wings and belly pork belly for the final 10 to 20 minutes of cooking

The addition of finely chopped onion, pickled gerkin, fresh crushed garlic and mayo turns it into a great speading sauce for meat. it attacks every part of your pallet from different directions
