It's small nodules of undigested fat. Or at least, that's what I've been told. The red bits in vomit are carrot, though.

Never drink a pint of ribena just before going to bed after a heavy night's drinking. The vomit the next morning is a very disturbing shade of blood-red. I nearly had a heart attack the first time I did it.

which are mainly cellulose, and which you can't digest. Unless you're a ruminant. The starchy goodness that was inside it, however, was digested and used to fuel the powerhouse that is you.
