Just some oregano at the moment.
And some black pepper for seasoning. I may add a sprinkle of fresh parsley towards the end.

however Onions, carrots and celery are the base of so many good dishes. promise you won't taste the celery at all.

I can detect celery in a dish no matter how faint the trace.
I usually grate the carrot in as well, I find it gives a nice balanced sweetness to the dish, that's not too in your face and still savoury enough to be nomtastic.
