there will be the usual anearobic bacteria already present, and as soon as you open that airtight container it will stink. And also the lid will burst off because of the gas build up, so you'll need a non airtight container with some kind of water trap on the outlet. And the gas that comes out will stink.

it's very good that you're trying to compost stuff, but if you don't have an outside space, does your council not collect green waste or food waste? Because composting on a large scale is much more efficient.

Because if you're not actually hosting a triffid farm, then you really don't need the amount of compost you will end up generating from a reasonable amount of food scrap.
