might work.
If you poached the chicken first you might not need the oven bit, even.

I'm never convinced shallow frying is any better for you than deep frying. Well, it probably isn't. Just less hassle I supposed.

That was what I was hoping to avoid really, the hassle of having a big pan full of oil
if you boiled it in milk for 10-20 minutes I would have thought that shallow frying would be enough to crisp the skin?
