I pulled up a huuuuge amount of rhubarb from my garden. Some of it is going to be made in to rhubarb crumble ice cream, but now I'm stuck with what to do with the rest. Any suggestions for using 5kg of the stuff?

Rhubarb's no use unless you feel it dissolving your tooth enamel!

Or:
1 -stew it then freeze it, and defrost later in the year for more delicious crumbles etc.
2 - make it into jam.
3 - sell/give it to your friends and neighbours.

Rhubarb is an early summer treat to be relished.
It's got the bonus of being especially useful if you haven't shat for a while. Better than all that pish they try to sell you on Channel 4 during Countdown.

Hopefully, I should be able to persuade the plant to give me a second crop. Need to harvest some manure from the horses next door.

but you need to take young tender stalks. The old tough stringy ones are horrible.
And make sure you avoid the leaves. They've got oxalic acid in them, which is toxic.
