Knives
It is never worth buying a cheap knife.

Also, learn how to keep them sharp
I thought I knew how to keep an edge on my kitchen knives until a chef friend came round, laughed disparagingly at my expensive "spoons" then showed me how to sharpen them properly.

Unfortunately, he didn't have time to show me how to chop safely, so I'm now mostly preparing meals based on red sauces.

correct, I tend to stick to the brand Wustof but I do have a Sabatier carving knife and fork set

Remember that Sabatier is not a brand
Anybody can call a knife "Sabatier"; from cheap'n'cheerful, upwards. (See also Laguiole)

One of my most treasured items is a knife
An original Ray Mears Woodlore, Alan Wood Knife, maple handle, in a leather sheath with a magnesium striker.
Was once offered £600 to sell it, not a chance
