It is possible...
...but not easy. I don't believe the PS2 has such a thing as a 'VGA Cable" like the xbox does. What I do, is I have a scan rate converter from Maplin, I can connect up to three normal TV devices to a PC monitor - I have freeview, PS2 and retro schizzle all connect thru it to my PC monitor.
Can't quite remember what it's called - it's something like VGA converter. Cost £25 about 6 months ago, but I think they were in Fire Sale.

I can't...
...find the product that I bought, I think it's discontinued. This link should help, but the options all seem to cots £70 - £100. I suppose a USB TV adaptor would be cheaper - just make sure you get on that can handle Analgoue signals, and has a breakout box so you plug in a Composite Video device.

If you bought that cable thing you linked to
then that's not going to be any use to you at all, you need a conversion box like the one I posted to display composite video on a PC monitor (unless the monitor has composite video input)

If you're using XP...
You can download the WDM drivers

Then use DScaler to capture the video from your graphics card. Plug the yellow composite feed into the orange "composite in" (the orange one) on the vivo cable, plug that into the graphics card, load DScaler, set the correct source in the file menu, and you is laffin'
You will also need a RCA to 3.5mm Jet, you connect the white and the blue to your line in on your soundcard, but they cost about £2.50 off ebay.
Nifty, Eh?
