just use v. little oil...
wipe round the inside of the frying pan with kitchen roll dipped in oil between pancakes.

dont you just mix flour milk butter eggs and sugar in some appropriate proportions
and poor them into a hot buttery pan. then when they start to bubble, flip them over with a spatula?

lemon and regular sugar
is a staple filling for pancakes in England ( on the traditional pancake day ) and whilst I love maple syrup on mine too ( another hangover from Canada ) To call the traditional filling 'bullshit' is hardly on when he wants to know how English pancakes are made.
English pancakes is a misnomer anyway. It's just a copy of crepe suzette without the zest added. Pancake batter is nothing more than yorkshire pudding batter just cooked differently.
