That's what they used to do
when they were worth £400, and got paid 20 quid a week.
Trouble now is you're scraping your studs across the human equivalent of a fucking Van Gough.
If you're OK to pay 50 million quid to the club, and 100 grand a week to the player you just crippled, you're good. His insurers aren't, they're the ones who dictate all this civilised behaviour nonsense.

As long as it's done reasonably, then I don't see a problem.
Obviously in sports where it is allowed, such as the given example, the fights are literally fist only. I've never seen an example of someone using their skate to inflict damage and if they were to, they would quite rightly be gone from the sport permanantly. I'm sure that rules could be entered into the "beating the living fuck out of each other" rule that would ensure such safety.
