I did beef wellington last yearit was incredibly tasty but undercooked. I know what I'd change if I did it again.

Makes a big difference if you put it in the oven room temperaturerather than straight from the fridge.

Not on the underneath, noround the outsides though. I needed to pre-cook the beef a bit more beforehand, and seal the pastry properly, because the ends of the wellington fell off. I maintain it was bloody delicious though.

It's really good.I tell you what, once berk gets her own place, we'll both go round for dinner. You can bring a munch box for starters, I'll bring bitter and offensive comments and some homegrown vegetables and berk can make her special wellington.
