I do a very simple, cupboard staples version
soy sauce
brown sugar
thinly sliced chillies
some ginger slices (take them out at the end)

thats it, reduce and pour over prwans and egg fried rice, happy days.

Ahhhh, I know why this is, I did the same thing over the weekend when I over-reduced some balsamic to quickly.
The mistake I made was that my reduction was too quick without enough sturing, the sugars solidfide the liquid.
