Why would anybody shoot down a plane that was flying over trackless ocean?
They turned towards the nearest airport, were overcome before they got there and the plane carried on with autopilot until it ran out of fuel and ditched.

They haven't been able to find it yet because they're relying on defence radar which is a secret and the sea moves. It moves quite a lot. By the time they've got a ship out to where they think they saw debris, it's moved.

Aviation, navigation, communication.
The pilot will have attempted to fly, find a safe landing area and then would have communicated his distress. That is the order in which pilots are trained to respond to a crisis. He could easily have been overcome by whatever happened before he got to communication.

There is a lot of stupid speculation around this crash.

especially as they had spent the first week or so
looking along the original flight path. so you would get a lot of drift in that time on some of the worlds roughest oceans

And we know more about the surface of the moon than about the oceans
Last time that part of the ocean was surveyed at all was 20 years ago.
