Cast iron pans are usually done in the oven.

it's carbon steel and will take quite awhile to get the proper patina that helps with the taste

Haven't used it yet though. Should be good for frying and ovening. It says it doesn't need seasoning and should build a patina on it's own. Sounds like fibs.
