Coffee + milk then water

But Instant is crap. I make better coffees on a coffee machine on a bad day at work then the instant stuff.

milk then water for tea so as to avoid scalding the leaves and upsetting the delicate balance of flavours, and water then milk for coffee, as it can't taste any worse than it already does.

so how does that theory work when you use tea leaves rather than teabags and pour boiling water into the pot with the leaves to brew?

You're totally wrong there, you need the water to be at least 96 degrees centigrade for teh tea to properly brew, which is why you warm the pot prior to the placement of leaves and just boiled water.
You're thinking of adding milk first to delicate porcelain cups in order to avoid them cracking when you add the hot tea.

Everybody knows it's milk first with coffee and then the water otherwise boiling water will burn the coffee and make it taste bitter.

Coffee: Milk then Water
Tea: Water then Milk
Coffee to be drunk at work to keep me awake/alive.
Tea to be drunk at home for maximum comfort and enjoyage.
