How would I recreate THIS kind of transparent text in Illustrator?

hold it in. take another, hold that in too, repeat until you are as full of air as possible, then hold it in as long as you can.

Just a guess:
Start by typing your text in a new layer.

Open an image containing your picture as a new layer.

Select Filter >> RTFM

Increase the value of Ineptitude to 100%

Tick the box that says "Did not Google"

From layer menu select add layer mask >> "Ask someone on /board"
