I kind of like corned beef. Mark's parents think I love it, and they always prepare corned beef sandwiches for me... and I eat it, but I don't really like it that much.

I think he's using salt-cured whole beef, which can also be confusingly referred to as corned beef, because of the 'corns' or grains of coarse salt sometimes used in the curing process.

I make a large chunk of it (~4.5kg) for a drinking weekend trip I go on every six months, been doing it for a fair few years now ... I had some left over and thought why not.
