question is though
do I cook the ribs in coke in the oven, or simmer them in a pan on the hob. I'm leaning towards oven, but that's only because that's where my experience lies.

You only need about half an hour in water for ribs
so coke should be the same.
I wonder what would happen if you used *spit* diet coke? it'd be much less likely to burn...

I wouldn't want to risk it being shit
because of the sweeteners, so will go with regular coke.
I have basically zero experience with boiling meat. I'm thinking to avoid burning sugar that I'd be better off going with not quite boiling, and for longer. What do you reckon?

a very gentle simmer should do it.
just keep checking it.
I boil ribs just in water and then make a sticky thai glaze for them for the bbq and it's absolutely lovely. But I'm liking your plan muchly, let me know how it goes?

oh, fuck it, I didn't read that properly
I'd do it on the hob. The sugar will caramalize and burn and if you aren't stirring it all the time the pan will be ruined and it'll tase burnt, so the oven is not so good as you aren't stirring it all the time.

how about do both - have you a biggish pan that'll fit in the oven?
... the benefit being you can do a very long slow braise if you want.
