I've been making a bolognese sauce all afternoon.
The sauce is basically a little bit of tomato puree and a shed load of red wine, then reduced down. Pretty intense flavour, if I say so myself. Needs a tad more puree, though.

however Onions, carrots and celery are the base of so many good dishes. promise you won't taste the celery at all.

I can detect celery in a dish no matter how faint the trace.
I usually grate the carrot in as well, I find it gives a nice balanced sweetness to the dish, that's not too in your face and still savoury enough to be nomtastic.
