EDIT: Although I have to say the weirdest and best I've found is very finely chopped chicken livers with the mince. Tastes fantastic and you get it piss off people who don't eat offal when you tell them as they love it too.

It's a Texture thing with both Kidneys and Liver for me
My Mum used to make us Liver and Onions for tea, and I hated the dryness and bitter taste
I used to eat it though - well you did in those days
