I don't see the problem.
Sure, you could say "Tomato" when asked which sauce, but when the other answer is "brown"* the shorter "red" is correct, succinct and conveys the necessary meaning.

*as mentioned this can be HP, Daddie's, Chop, steak, or any other name for very similar sauces.

Hearing "red sauce" and "brown sauce" makes me cringe, too.
But I've yet to hear "yellow sauce". For some reason it's still described as "mustard".
