Roast a halved butternut squash for 30-40 mins until it is cooked and browning slightly. Chop some chilli and ginger up finely and fry until cooked. Throw in the scooped out butternut squash bits and top up with chicken stock. Boil for 5 mins and add lime juice and corriander leaves.
You can have the lovely mushroom one I did ages ago too:
Cook down a load of different types of mushroom with garlic and shallots. Add half a bottle of red wine and reduce down. Add some beef stock and cook for 10-15mins. Take out half and blitz, then mix all back together again.
Serve in deep bowls with a massive spoonful of soft polenta in the middle

Stir in two heaped tablespoons of cornflour until you get a roux ( a mix of fat and flour).
Pour in a pint of milk and heat slowly whilst stirring to prevent it getting lumpy.
Make sure you dissolve all the roux by using a sauce whisk if necessary.
Piece of piss.
