I was advised to boil the chicken in milk first as this makes it really tender.

This is true
also, means you can fry it hotter for a shorter time (tastier and less greasy) without risking the chicken being raw.

I shallow fry, to get the breadcrumbs nicely stuck on and to get some oil onto the chicken
then shove in the oven to cook through

If you poached the chicken first you might not need the oven bit, even.
I'm never convinced shallow frying is any better for you than deep frying. Well, it probably isn't. Just less hassle I supposed.

That was what I was hoping to avoid really, the hassle of having a big pan full of oil
if you boiled it in milk for 10-20 minutes I would have thought that shallow frying would be enough to crisp the skin?
