Cajun is a bastardization of 'Acadian'
which were French Canadians that moved to southern Louisiana. Therefore true Cajuns are of French descent.

Cajun Squirrel had the least freakish aftertaste and onion bahji was possibly the most normal, but don't eat them if you want to be close to another person for 6 or 7 hours after
