The video of the "completed" compost looks nothing like completed compost, it's still onion skins and vegetable peelings. Anaerobic digestion works, but doing it on a small scale like that is just daft, you're much better off with a standard compost heap or a wormery.

there will be the usual anearobic bacteria already present, and as soon as you open that airtight container it will stink. And also the lid will burst off because of the gas build up, so you'll need a non airtight container with some kind of water trap on the outlet. And the gas that comes out will stink.

it's very good that you're trying to compost stuff, but if you don't have an outside space, does your council not collect green waste or food waste? Because composting on a large scale is much more efficient.

it'll still make methane, and more importantly, if you put protein in there, it'll make ammonia. and that will most definitely ming.

some bugs upregulate some and downregulate others more. Methane isn't really a smell problem anyway to be fair, that's ammonia.
