The day crew are straggling in.
In the meantime, I'd suggest smoked salmon and cream cheese - goes quite well with the potato.
That, or sour cream and chives. That goes well poured on the bacon and cheese.

Use Pancetta cubes instead of bacon and add some chopped onion.
Top with rough grated parmesan before putting them back in the oven.

I just mash the cooked potato with corned beef, stick that in the potato skin, cover with cheese, and grill it.
Much easier!

Bake your potatoes. When cooked, scoop out the flesh and place in to a bowl. Add some chopped spring onion, as much grated mature cheddar cheese as you like, a dollop of cream cheese, and a generous helping of chopped crispy bacon. Mix well, adding a big glug of worcester sauce.
Now, spoon this mixture back in to the potato skins, add a bit of grated cheese, and pop back in the oven for 10 mins or until brown.
Great comfort food, but to avoid lardiness/heart attack, only eat once a year! :)
