spicy pumpkin soup
many mushrooms and garlic pappardelle with shaved parmesan
stilton on walnut bread
other (somewhat cruel) highlights on the menu were venison cheek, black-faced baby lamb, lobster risotto, pumpkin and goats cheese ravioli, wild cod with champagne and mushroom fricassee, roast suckling pig, hot chocolate fondant with orange ice cream, belgian chocolate and hazelnut tart, giant citron macaroon... it was great!

Several possibilities
Nightrain by GnR - One of their most under-rated and never ever fails to get me going. The whole thing encapsulates the period excess and GnR for me.
All Along the Watchtower by Jimi H - apart from the spellbinding guitarwork it just swells perfectly into itself with stellar drumming. Not sure if this counts because it's a cover.
Bad Boy Boogie by AC/DC - I think it's DC's greatest ever work. Perfect hard rock with the best mix of blues tone they did.
Last but by no means least
Gimme Shelter by the Stones - this song makes me funny in all the right places. Phwoar. Especially love the bit where Merry Clayton's voice snaps. So much fucking passion. Woof.
