I'm not sure.
I'll either make a relish-type thing or a proper sauce. I can get a large bag of scotch bonnets for a quid in Whitechapel so if it doesn't work out it's no great loss. For a sauce I'd blend garlic, tomatoes, sugar, salt and chillies I suppose.
