This year I plan to yet again ASTOUND everyone with my amazing cooking skillz
I'm thinking pork loin in calvados with dauphinoise potatoes. I'm not a big fan of turkey. I'll probably be at my parents but it depends on what my sister and her family is doing, and also what tennis boy is doing.

That sounds delicious
I might do the same thing I did last year

I've never done that
and I'm not sure how comfortable my family would be with vomit for dinner

I did beef wellington last year
it was incredibly tasty but undercooked. I know what I'd change if I did it again.

Nah, that was clearly alright
she just needed a smaller piece of beef.

Makes a big difference if you put it in the oven room temperature
rather than straight from the fridge.

Do you put pate underneath it?
(
Bazongaloid, Wed 28 Sep 2011, 13:23,
Reply)
Not on the underneath, no
round the outsides though. I needed to pre-cook the beef a bit more beforehand, and seal the pastry properly, because the ends of the wellington fell off. I maintain it was bloody delicious though.

although I was going to gaz you those paté recipes and forgot. Beef wellington really isn't that hard to make...

I tell you what, once berk gets her own place, we'll both go round for dinner. You can bring a munch box for starters, I'll bring bitter and offensive comments and some homegrown vegetables and berk can make her special wellington.

You could cover yourself in sprouts and gravy
and lie there looking seductive and say "tuck in" and then your mum would say "I'm not very comfortable with you doing that on the dining table"

I think I'll save that one for when tennis boy and I live together
although neither of us like sprouts and he isn't northern enough to want to lick gravy off anything.

Although my brother did a nifty trick a few years ago, and turned the turkey over midway through cooking, meaning the breast meat stayed nice and moist, that improved it quite a lot.

I just find the flavour bloody boring.

The thing I find disspointing about turkeys
is that even though the drumsticks are massive, you can't just chomp through them like a chicken as they are all sinewy.

Bazongaloid, Wed 28 Sep 2011, 13:22,

If you soak the turkey in brine for 48 hours or so they're chompable

PsychoChomp, Wed 28 Sep 2011, 13:24,

I've heard this but I remain unconvinced
I just cover it in butter and bacon, surround it with pigs in blankets, potato, sweet potato and parsnip and it seems to come out nicely

I love parsnips
Probably the most underrated part of the roast. Either that, or broccoli.

Not a fan of broccoli
Probably as the kids both love it and so we end up eating it most days.
I've just had one of those Innocent Veg Pot things - thai curry. It was quite nice

I prefer it when you get a small portion
and really enjoy it, than when you have a massive slab of fish that in the end you're only eating because it's there.

My nearest chippy is quite good
but about 5 mins drive away in Tynemouth is one called Seashells which is fucking amazing. Their fish taste so good and are massive, meaning you nom until the end

When it burned down a couple of years ago, I (along with most of Macc) was quite gutted, but now it's reopened, it's all good!

I've done it two years in a row.
It makes a cheap turkey taste expensive and an expensive turkey taste amazing.
It stops it drying out as well.

How salty would the brine need to be?
I'm very tempted to do this. Do you need to rinse it off again afterwards?

Very salty, you're looking at a packet of salt in a bucket of water.
You put other shit in there as well

Got an e-mail from the wife yesterday asking if your mrs worked in her office as there was a women behind her who sounded just like her. I asked if she was farting and swearing every other word and she said she wasn't, so I said it must have just been someone who sounded like her.
