Yup !
It's so nice roasted with balsamic vinegar or served with a balsamic rediuction. There is a cold soup from the soviet areas called Bosht, which is a beatroot soup, really really nice. I've not tried it yet, but I've noticed you can get beatroot juice now too, I wanna try that.
