It could scale up and down. The odd number of rows/columns lends itself well to targeting a reference square and guiding the user to the correct grip. Manual would work though.

In the timer version, why does the length of the solve time influence the complexity?
I thought it would speed up the solve moves in an amusing way if I set it to 2 seconds but it just got more stupid

It doesn't, but as it's a timer, it intentionally takes a longer route to get to a solve. I think this is more pleasing. Usually, the algorithm is never more than about 20 moves away from a guaranteed solve
