I use photoshop too.
You don't have to use the pen tool but it's a very editable way to produce vectors. If you find editing bezier curves too fiddly, you can use the freeform pen tool and play with the "curve fit" option to get it to behave the way you want. There are LOTS of other ways to produce vectors in ps though. Check out the help files on paths and the paths palette, there's bound to be a working method that suits your style.
