If you had been following the news at all, you'd realise that the spread of the virus is completely inevitable now. Wearing masks/washing your hands might help delay the spread, but unless you plan on completely isolating yourself from society for the next 12 months, it's literally going to be the toss of a coin whether you catch it or not. Whether you choose to panic about that or not is up to you. But it makes about as much sense as panicking about a gigantic asteroid on a direct and unavoidable collision course with earth. It's a bit rubbish, but really, it's a situation that realistically is entirely out of your control.
Mind you, how do you reason somebody out of something they didn't reason themselves into?

There are thousands of disagreements that happen all the time in science, often between people just as credentialed as Osterholm. And the one bit of scientific consensus about Covid 19 is that we need to study it more, as there are many factors about it that we have yet to establish. So anybody who speaks with certainty about prevention, for example, is doing so without substantial firm data about this new virus, and hence it can only speculative. There won't be any scientifically rigorous comparative studies of different methods because it's new and we're in the middle of a crisis, and that sort of epidemiological study is quite tricky to pull apart confounding factors, so you need time and well-documented large cohorts and controls
I don't know why you've decided this one individual is the gospel, enough to shout in capslock at other people, but it shows quite a bit of naivety and credulousness on your part.

if they were better prepared then they would have N95 face masks for all health workers. Which would make a massive difference. In Italy today health workers that have tested positive have been told to stay at work because they're needed. An absolute crisis and it will happen here too.
I don't think they are outright lying. So your question is a distortion and I can't respond to that without a skewed answer. As said above, if you wash your hands and don't touch your face nothing bad will happen to you so why not.
It's actually super difficult to answer your question in text here because it's a complex answer and easy to misinterpret. So this is not how I feel and is IS s skewed answer, but the simple one would be, because they're trying to give us agency and to maintain public calm. basically keep calm and carry on is why. It can't hurt and we don't have N95 face masks to hand out is why. would be my guess, but as I said, this answer is a simplification of how I feel, I'm not going to write an essay you see, because I'm not eloquent enough to present a clear yet complex answer and actually would have to debate the question itself, not going to do that.

the Presidential Endowed Chair in Public Health is a U Min award given to staff at U Min by the dean. So it's a bit of a "employee of the month" award.
his Centre for Infectious Disease Research and Policy again is something that he created himself at U Min, not some federal organisation like the CDC that he was chosen to be a director.
I'm sure he's a fine academic, and sounds like he is a big deal in Minnesota, though he seems to be more dedicated to writing popular non-fiction these days with scary titles and promoting them on radio. But there's plenty of Epidemiologists at other faculties around the US who have published more than him whose opinions would carry equal weight, if not more. Don't get too carried away

There's a significant difference between claims made by an academic in a media interview or even a book and what they commit to reasonably tiered peer reviewed publishing. The podcast interview in question didn't come with links to the papers he's referring to so when he uses informal, imprecise terms such as 'big' we can't assess the data backing it up and his interpretation . The Twiv podcast I mentioned above comes with a reference list of all the papers the virologists have discussed on each episode.
